Our Newest, Bestest Buddies: The Scotch Egg And Arancini

by Steven Doyle

Move over pizza and burgers and make way for a few new fads that have been invading menus all over Dallas. Last September I waxed on about how much arancini was a lovely little bite that made me smile and recall a  restaurant in Lucrino, Italy from just a few years back. I was not aware that I would be reminded of the tiny Mediterranean city nearly every day just months later.

Arancini are the small bites of fried risotto usually stuffed with cheese or vegetables, and have made their way on to most menus in the city.  Just a few nights ago I sampled a crab and black truffled version that was insanely good at Marquee Grill.  I don’t mind seeing these daily on menus, they are a fun bite and can be dressed up quite nicely for almost any occasion. If you are a chef contemplating these for your menu, take a page from the Tre Wilcox cookbook.  His kick some major bao.              Continue reading

Making Your Own Charcuterie Class at Milestone

by Steven Doyle

Over the past few years the word ‘charcuterie’ has been bandied about quite a bit, and associated with a few very popular local chefs such as David Uygur owner of Lucia, Brian Luscher owner of Grape, and Kuby’s who has been cranking out fresh sausages for ages. In more recent months we have enjoyed Matt McCallister’s creations. We visited some of the old timers last year and caught a fantastic conversation as a few of the more seasoned chefs discussed their product.      Continue reading

Tillamook Burger Week

by Steven Doyle

We will sign off any reason to try a great burger, and this week Tillamook provided just such an occasion. We are already knee deep in Tillamook’s Dallas Burger Week and you can find their cheeses layered on some of the city’s finest patties March 17-24, 2012.

What makes this whole Tillamook cheese week so special is that you are guaranteed to have delicious slices of real cheese oozing down the side of your burger instead of some odd science experiment.   Continue reading

Zen Enters Cupcake Arena

by Steven Doyle

I am not really sure where the cupcake sits in the pastry line-up these days. This past weekend I had the opportunity to step into more than a few bakeries, each featured a cupcake, cake balls and other sweet treats like macarons. My personal affinity is towards the macaron, the power-packed tiny sweet sandwich made from meringue.    Continue reading

First Look: Spread Eagle Saloon

by Steven Doyle

I  stopped in the new Spread Eagle Saloon last night after several attempts in the past to try their food. (Note to self: there are only a few items sold on Sunday and Monday when the cook is off. Mostly fried cheese.) At first glance the bar seems a bit sparse in décor, but that is actually a good thing. No odd vintage bicycles or bird cages dangling from the ceiling in a false attempt to give the bar character. This is a neighborhood pub that offers decent beer at a good price and also has a short menu to feed the hungry soul.     Continue reading

Keller: The Land of Milk and Honey

by Steven Doyle

Just days ago I aimed my car west and headed to Keller, which until now has been known for its Babe’s Chicken, at least in my mind. Stepping into boutique restaurant Milk and Honey is like walking up onto the back porch of an Amish couple at supper time, which for the uninitiated, that is a very good thing.

The restaurant actually has a southern gentility to it, and is stocked with trinkets that your grandmother coveted so much. I am talking the needle-point, the glassware, and all the photos that could be stuffed into a trunk. It’s actually very quaint and comforting.            Continue reading

40 Under 40 Benefit For Dallas Furniture Bank

by Steven Doyle

Last evening I stopped in the 40 Under 40 Awards Presentation and Battle of the Bakers that benefited the Dallas Furniture Bank.  There were several recipients of the award that pop up on craveDFW from time to time like Iris McCallister, CEO of Oh* Brownie, Sander Wolf from DallasChocolate.org, Catharine Flagg who is a  partner at Jackson & Flagg Public Relations, and local food and style writer Jennifer Buxton.   Continue reading
