Celebrate Cavalli Pizzeria

by Steven Doyle

The McKinney location of Cavalli Pizzeria recently celebrated their fifth anniversary, however their first location has been in business since 2008. They were the first restaurant in Texas to receive the Verace Pizza Napoletana certification, that is the akin to being blessed by the Pope in the pizza business. This weekend we happened to be out running around up north and thought to stop in for a bite and check out how the pizzeria was doing.

As it turns out Cavalli is doing quite well.

The Cavalli family are first generation Americans, and when they settled in the Dallas area they had a difficult time finding the type of pizza they are making today. Since their opening, more than a few others have joined the ranks and are now making Neapolitan pizza. Most notably Dough Pizzeria Napoletana in North Dallas, and Pizzeria Testa in Frisco. Q&A With the Dough Boys

by Steven Doyle

The Dallas outpost for the interesting and much lauded restaurant Dough has been quietly generating plenty of buzz around the Preston Hollow area of Dallas  since opening August 16, 2011. Since then the restaurateurs have been knee deep in dough and mozzarella.

The pizza Brad Liles and Keith Hall are putting out is nothing short of spectacular. It  is exactly like the award winning pizza from San Antonio.  We reviewed that pizza  just before the duo opened their shop in Dallas. But what truly stands out is their burrata. We are so smitten with Dough’s burrata bar that we stopped by for lunch yesterday and chatted with the Dallas owners to discuss cheese and much more.    Continue reading

Less that two weeks ago Jay hired one of the most noted pizza makers in the United States named Dino Santonicola. We caught up with Dino recently to ask him a few questions.

In speaking with Dino we enjoyed his over-the-top accent and his love of pizza. Read on to see what changes he has made to Cane Rosso and what ingredients should not be on a good pizza.     Continue reading
