Q&A With Stark Raving Chef Patrick Stark

Chef Patrick Stark is passionate about everything he encounters. be it life, music, art and food. He takes each of these subjects extremely seriously, and embraces to the core. Stark is the executive chef at the Sundown at Granada located on Greenville Avenue, and there he focuses much on clean food, free of GMO’s, organic as possible, seasonal, grass-fed, and even gluten free. Stark is fanatical when it comes to his sources. He is also the Grand Poobah of the Mohawk Malitia, and organization dedicated to raise awareness to genetically modified food, and has teamed up with the North Texas Food Bank. All proceeds generated from sales of Mohawk Militia patches and stickers will go to purchasing fresh food from local farmers in feeding inner city folks who don’t have access to supermarkets.

The Moose Report: SALT Launch Party a Go-Go

This is the weekend many of you have been waiting for – SALT is finally having their launch party tonight.  There will be cocktail specials, live DJ music and delicious food.  SALT will be introducing their new dining menu which will include tropical Pineapple & Jalapeno Escabeche Alaskan Cod and Pan Seared Rockfish, sweet-chili calamari, and smoked beef carpaccio.

The Moose Report: Cinco de Mayo Enchilada Eating Competition

Enchiladas Restaurant located on Greenville Ave is hosting it’s 3rd Annual Enchilada Eating Competition again this year to be held May 3rd at 1pm.  The contest coincides with Enchiladas Restaurants Cinco de Mayo celebration on Saturday.  Sign up was closed May 1st but that doesn’t prevent you from feasting your eyes on some crazy enchilada eating.   Continue reading

Meet The Latest Dallas BBQ Food Truck, Not Just Q

I sat down recently with Eric Hansen and Robert Carter who together just started a new food truck business called Not Just Q. Curious name, but certainly we could assume they are doing BBQ and plenty more. These are both interesting fellows, with different backgrounds and personalities that seem to make it work.

Eric Hansen is classically trained at Cordon Bleu and hails from the Kansas City area. Eric has worked at restaurants and been in the business since he was 11 years old.  Being from Kansas City that means pork shoulders, ribs and plenty of sauce to soak up the meat. Robert Carter has a background in psychology and worked with children. It was after many sleepless nights that he abandoned his life’s work for the restaurant industry. He lists a series of high profile BBQ legends including Big Al’s, Eddie Deen and most recently Mike Anderson.    Continue reading

Under the Radar: A Modern Steakhouse Downtown

What do you expect from a steak house? A litany of classic cuts (filet, ribeye, strip, porterhouse/t-bone) and derivative sides like button mushrooms and baked potatoes? Maybe with a giant monolithic whole carrot to add color?

What if you have been there, done that, and become somewhat more demanding. Want a choice of grass-fed beef? Dry-aged corn-fed beef? Sides that are as creative as the entrées in most farm-to-table restaurants? Charcuterie that is made in house? Housemade mustard and chutney? A 300-selection wine list that includes Texas selections from Duchman Family Winery and The Vineyard at Florence? Local beers from Deep Ellum Brewing Company? To turn to credentials, how about a chef who Staged at The French Laundry (and only turned down the job that was offered because of the prohibitive cost of living in Napa Valley, California). How about also staging at Alinea and working for a year at TRU in Chicago?    Continue reading

Eat Me: Sundown at Granada’s Scallops

Pretty much everything from the kitchen at the Sundown at the Granada is a home run, including this beautiful plate of seared scallops.

Tomorrow we interview Patrick Stark, the rock and roll chef from the Sundown, and find out what he has been up to (besides plenty of television), and what he has planned for the near future at Sundown. It is a spirited interview with some new surprises, and a fun adventure with this fascinating chef.

Coming To A Pub Near You: Thrilla In Brazilla
