State Fair Fry King Abel Gonzales Opening Brick and Mortar Restaurant

It’s an exciting day in the Dallas food world as we receive word from chef Abel Gonzales, the five time Texas State Fair Big Tex Award winner, about the good news of his restaurant opening. Look for Republic Ranch to open this Spring. The theme will be a continuation of his Texican theme. Think smoked BBQ meets Mexican.

Republic Ranch will be located at 3121 Ross Avenue next to the newly opened tiki bar, Pilinkas.  Continue reading

The Moose Report: SALT Launch Party a Go-Go

This is the weekend many of you have been waiting for – SALT is finally having their launch party tonight.  There will be cocktail specials, live DJ music and delicious food.  SALT will be introducing their new dining menu which will include tropical Pineapple & Jalapeno Escabeche Alaskan Cod and Pan Seared Rockfish, sweet-chili calamari, and smoked beef carpaccio.

First Look: Stephan Pyles San Salvaje

The Peruvian dish, tacu-tacu is this amazing staple that was brought to South America via African slaves. It is a humbled dish that has survived generations and is made of rice and beans prepared with a side of fried plantains, or fried eggs. At the new Stephan Pyles restaurant, San Salvaje, tacu-tacu is served with a caramelized banana and a thick slab of seared foie gras. It is earthy, supple and delicious, all at once.

San Salvaje replaces the beautiful but tiny Samar at 2100 Ross Avenue in downtown Dallas, and celebrates cuisine found anywhere south of Harligen, according to Pyles. This could mean most anything, from Mexico, across to Cuba, and definitely Peru where you could find tacu-tacu on any plate on any given day.   Continue reading

First Look: Toad in the Hole

Southern Comfort is no more. In fact, so is Ku Da Ta. Make way for the freshened up Toad in the Hole that is officially open for business located in Southern Comfort’s digs, and weeks before it was actually to open for business. Here you will find the magnificent bars inherited from its former self, but with a much more relaxed vibe. The crowd is as interesting as the cocktails being poured, and the food is reflects the name and has this amazing Brit flavor right down to the house-made HP sauce.

For the kitchen portion of Toad they brought in TK Culinary. For those not familiar, TK is Terry Kranz who has been operating hs own catering business for some years now after working or so long with Kent Rathbun. Kranz brought in another Rathbun alumni, chef Sean Frye who has developed a menu for Toad in the Hole that is fairly remarkable. Think Scotch Eggs wrapped in a made-from-scratch Cumberland sausage and drizzled with a roasted garlic aioli.      Continue reading
