The Rise of the Tullamore Phoenix

tullamore1by James Davidson

The fine gentlemen at Trinity Hall opened their doors and tables to Mossie Power, brand ambassador for Tullamore DEW and us sods who love whiskey.  Tullamore DEW just launched a limited release (only 2,500 cases) of Phoenix.  The Phoenix is inspired by the resilience of the people of Tullamore, Ireland which is covered here.

The night started with some tasty appetizers and jovial conversation.  After we got our first dram of the night, Tullamore DEW, Mossie Power got on stage and lead us in the Sláinte Gaelach Irish Toast:    Continue reading →

More Sparkling Wine For The Holidays

chalkby Andrew Chalk

Religious activities continue this week with another sparkler to turn carpe diem into carp with veggies. The most famous sparkling wine in the world is Champagne. It is distinguished by, among other things, its location, choice of grapes and its method of production. However, of these, the grapes and the production technique (secondary fermentation in the bottle) can be used in other locations. So it is with the three wines here today.

These are all made by Ferrari (no relation to the car maker) in Trento, Italy. All use the Champagne production method, which the Italians call Metodo Classico (classical method). The Ferrari Brut, Trento DOC ($25, Goody Goody) is 100% Chardonnay. This is dry, like Champagne, crisp and yeasty, like Champagne, but the price is a bit lower.

The Ferrari Rosé, Trento DOC ($37) is made from 60% Pinot Noir/40% Chardonnay, like rosé Champagne, and dry and crisp with a hint of Pinot fruit.     Continue reading →

‘Tis The Season For Bubbles

chalk1by Andrew Chalk

The best thing about my religion (The First Church of Immediate Gratification) is that the period from Thanksgiving thru’ January 1st is one long party. It beats learning long liturgical passages, self-denial, parsimony (and other root vegetables) and (most forms of) self flagellation. While participants of other faiths are burning candles, I’m burning them at both ends.

Top juice for the season is definitely sparkling wine. Recently I had a Skype conference with Julius Angel, Owner of Angelini Wine. He helps make my religious activities possible.    Continue reading →

A Duo Of Dallas Brew Tours: Peticolas And Community

peicolas4by Brian Wall

Fall, the best of seasons aside from Spring. Temperatures cool down, leaves change color, temperatures cool down, children go back to school and most importantly temperatures cool down. With a cooler temperature, it is a world of difference when you decide on going to a large un-air conditioned warehouse for a brewery tour. Some do have temperature controlled areas but most can be as hot as the outside or hotter if there are plenty of bodies jockeying for beer.

This past weekend was a definite nice time for a brewery tour or possibly two tours if you feel up to it. Seeing as though Peticolas Brewing Company and Community Beer Company are roughly one mile away from each other, this seemed like a very doable reality. The tour started at 12pm at Peticolas and last pour is at 2:45. Community does their tour from 2pm-5pm, so times are not a problem.    Continue reading →

Meat Fight 2013 sold out in mere minutes. The is the beefy extravaganza that took place last night at Four Corners Brewing Company and is the brainchild of one Alice and Mike Laussade. You know her as the award winning  columnist for the Dallas Observer. The event raise $50,000 that will be sent to National MS Society for research into that cause. The chefs that participated were strong and broken into competing teams made up of Brian C. Luscher, Jeana Johnson, Jeff Bekavac, Omar Flores, Chad Houser, David Uygur, Jeffery C. Hobbs, Anastacia Quinones, Tiffany Derry, Nathan Tate, Eric Dreyer, Cody Sharp, all hot-shot meat experts from the Dallas area.

I was excited to get a call a mere few moments before the sold out event started from Jon Alexis from TJ’s Seafood Market who invited me to use one of his tickets that opened up suddenly. Alexis supplied the salmon, which was used as a wild card category for the evening.    Continue reading →

True Food Kitchen Gets Out of the Starting Gate With a Bang

IMG_2753

by Andrew Chalk

Dateline: Friday November 15th

It was only a preview event tonight, but it already looks like a foregone conclusion that True Food Kitchen is going to have that “death star” impact that you might more usually associate with a Pappas or Badovinus opening. This, the first Texas outpost of a seven unit chain (5 in Arizona, 1 in Denver) from Fox Restaurant Concepts is the flagship for a major expansion in the state. Everything has been scrutinized, checked, and double checked to make sure it works. Although tonight was only the third time that stoves in this kitchen had been fired up, and the place was slammed with media, trade people, foodies and contributors to Café Momentum, their were remarkably few hiccups. Sure, a bit of a delay at peak time, but no big deal.

This is a slick operation and that will be solved. Speaking of Café Momentum, a delighted Chad Houser (executive director of the organization) wants to say thank you to attendees for the over $2,000 that you contributed to the organization’s work. He still won’t tell me where their permanent restaurant will open, but I get the distinct impression that it is RSN (real-soon-now). Apparently, lots of generous Dallasites are realizing that the recidivism rate among your offenders is 50%. But, put them through Café Momentum, and it drops to 15%.    Continue reading →
