New Pop-Up Restaurant

by Steven Doyle

There are many unique trends in food these days. Certainly the gastro pubs seemingly are on the forefront, as are the food trucks. One trend we follow more actively on craveDFW is the underground or pop-up restaurant.

We have a new discovery for those who enjoy dining at these intimate and somewhat clandestine culinary gatherings. Chef Nicole is no stranger to the Dallas restaurant scene, having worked at top shops in Dallas including Nana for chef Bombaci. Nicole graduated at the California Culinary Academy in San Francisco in 2003 and has since made her mark.  Continue reading

by Steven Doyle       photo by Robert Bostick

Chef Abraham Salum of Salum and Komali will be cooking for the James Beard House  in New York October 21, 2011. There he will be making dishes that reflect all aspects of his Spanish and Lebanese heritage, with a large slant in the direction he takes at Komali.

James Beard was a pioneer in American cookery, leading the charge through education and had the first televised cooking program in the United States. Today Beard is celebrated with the many events that promotes chefs across America.  Continue reading

Vacation Santa Barbara – Carr Vineyards and Winery

by David Donalson

When going on vacations, my first instinct is to look up the local food and wine scene and make my plans from there. When my wife and I decided to go to the temperate Santa Barbara, I was immediately reminded of the movie “Sideways” and their search for Pinot Noir in the Santa Barbara County. In my research, Carr Winery was high on the lists of boutique Pinot Noir and Cabernet Franc so off we went.

Not to make every person jealous but we decided to ride bikes to the local wineries, enjoying the cool Pacific breeze and a little exercise. Trust me, I wish I was back there now with these 90 degree nights. After a short bike ride from the Fess Parker Double Tree Resort right along the beach, we arrived at Carr Vineyards and Winery.     Continue reading

Camarena Tequila Brings Free Tacos to DFW

by Steven Doyle

Two undisputed facts about Texans. We love tequila and we love tacos. This makes today’s news of the Camarena Tequila Taco Truck moving into the Dallas area so incredibly sweet. As the truck was making its way into the DFW area, the brand selected to work with the Commissary in One Arts Plaza as their local ambassadors. Almost daily you will find Commissary sous Phillip Vorkoper working the truck at various events across the city including Cowboy’s games, festivals, concerts and such. You will also see chef John Tesar making his brand of tacos in the truck quite a bit.       Continue reading

UNT Adding All Vegan Option

by Steven Doyle

We just caught word from a Denton vegan friend that one of the four cafeterias at UNT has suddenly become vegan. UNT Dining Services has converted Mean Greens to an all vegan cafeteria and to open this Fall semester.

The culinary staff headed by Culinary Operations Chef, Wanda White, has been retooling the cafeteria creating recipes using nothing but fresh herbs, vegetables, fruits, beans and whole grains. The goal is to satisfy the students, faculty and staff of UNT. The number one request has always been to have more vegan and vegetarian options. More people eat a variety of fruits and veggies than people who solely eat meat. Serving a completely vegan menu gives students the opportunity to explore new things and stimulate their tastes.      Continue reading

This will coincide with an Art Walk that will be held from 10AM to 4PM. The Farmers Market is open from 8AM – 1PM, with Hatch Chiles being sold till 2PM.  Continue reading
