Belly And Trumpet’s Brian Zenner Captured The Sea

Chef Brian Zenner is an interesting soul of a chef, and it plays out well on his plates. Born in Thailand, but also lived in Dubai and London, gives this chef a well rounded perspective on how we should be dining. The chef sharpened his skills working in Portland and in Austin before making his way to Dallas where he had a stint at the Mansion on Turtle Creek just before being recruited as Chef de Cuisine at Oak under Jason Maddy. Zenner finally landed his own exec position at Belly and Trumpet. It is at Belly that the man displays his talent, and we are all better for this.

This past weekend Zenner entertained a packed house to a Sea to Table dinner, which consisted of eleven courses, not counting a pastry course by Oak chef Lucia Merino. The night sizzled with excitement as each course was hand delivered; you could hear a strong buzz among the crowd which was suddenly silenced and replaced with the soft clink of forks hitting plates.     Continue reading

Swimming With Franchesca Nor At Dive Coastal

Franchesca Nor is this intelligent and vibrant restaurateur who owns Dive Coastal Cuisine located in Snider Plaza, just across from SMU in University Park. As the chef-owner she is backed up with plenty of industry knowledge as a  summa cum laude graduate from Johnson and Wales. While in school she interned for Chef Allen Susser, owner of Aventura and the innovator of New World Cuisine and founder of the Mango Gang. After graduation she as heavily involved in all aspects of hospitality including events, public relations, concierge work, catering and partnered with Ernesto Arguello to start a  boutique hotel in the heart of South Beach called STAY at Lincoln.

Nor eventually moved to Dallas to be near her sister. “My sister reminded me that we lived next to chef Nick Badovinus and he was opening a new restaurant, Neighborhood Services.  I went and spoke with Nick and told him I could do pretty much anything – working in the kitchen, run the front of the house,” said Nor. “No.  He said I would be good as wait staff.  I thought I could be better used elsewhere, but agreed.  It was perfect.  I was able to meet all the clientele I have today.  I learned how restaurants work in Dallas.  I saw what people were eating”.   Continue reading

TJ’s Collaborative Lionfish Dinner At Driftwood

TJ’s Seafood and Driftwood held Dallas’ first ever Lionfish Dinner on Monday night, treating guests to five courses paired with wines. This invasive species, which is native to the Indo-Pacific, has found its way to the southeast coast of the U.S., Caribbean, and Gulf of Mexico.

TJ’s owner and seafood guru, Jon Alexis, started off the evening informing diners of the issues surrounding the fish. “Lionfish have no predators, can lay up to 40 thousand eggs every three days, and eat anything and everything they can fit into their mouths. However we can become its predators. By eating them!”    Continue reading

Start The New Year By Cooking Up Healthy Seafood At Sea Breeze

Sea Breeze will resume their very popular cooking class series this month with a seafood class on Sunday, January 26.  Classes are traditionally the fourth Sunday of each month from 3-4:30 p.m.  Guests in the classes will learn 3-4 seafood recipes, taste those recipes and enjoy wine pairings as well, all for $40 per person.

Class size is very limited, and reservations are required.  Reservations can be made by calling Sea Breeze Fish Market & Grill at 972-473-2722.

Amberjax To Open Dec 20 In Trinity Groves

Trinity Groves is hopping with a few new restaurants just weeks away from opening. The next restaurant to open in the super cool dining area on the other side of the new Hunt bridge is Amberjax. Check out their website for a full menu that actually reads like a bible. Insiders tell us that the kitchen is equipped with every gadget known in the chef world, and it looks like they are going to use each implement. Amberjax is all about the seafood. Look for menu fare such as BBQ Shrimp Po Boys (my favorite since I am from New Orleans) to Grilled Swordfish and Filet Oscar.

In the market, AmberJax will provide an array of entrees including fresh fish, seafood and prime beef. The market will cater to families on the go, offering take-out and ready-to-cook healthy meals, as well as fresh produce and side items.     Continue reading

Four Shuck and Jive Greenville Break-Ins Total Over $20k in Losses, You Can Help

Shuck and Jive is a really cool local hang out. I have personally made my way there many times over the years and always have a good meal, a very cold beer and a “Cheers” type of an afternoon each time with spirited conversation with the bartenders and patrons alike.

There are times when we must pay back for our good fortune and great times, and today I am calling for just such an occasion. In the last month Shuck and Jive on Greenville has been burglarized four times. Four times with a total loss of over $20,000. That is a huge poke in the eye for a small restaurant like Shuck and Jive.      Continue reading
