Last month I introduced you to Eric and Karen from Caprino Royale down in Waco, one of the most promising young farmstead operations in the state. Last weekend, we got to visit their farm as part of our annual cheese tour (see Steven’s article for a complete roundup of the day). One of the highlights of the trip for me was getting to see where they make Caprino’s fantastic new addition to their lineup: the Texas Bloombonnet. A beautiful bloomy rind goat button, Bloombonnet is easily enjoyable all on its own, but the cheese is all the more impressive when you know some background about the difficult and inspired path that led to its creation. Wednesday May 11th opens the beginning festivities at Central Market’s Espana, a two week celebration that dives head first into Spain’s spirit, language, music, art, architecture and of course food. In the coming weeks you will be able to experience tapas and paella and so much more from some of the grand chefs of the Spanish cuisine movement that has taken flight as some of the greatest cuisine in the world and Michelin stars are passed out like Pez dispensers. Glenfiddich Tasting Tonight
Here is a special opportunity for those that enjoy great scotch:
Glenfiddich Ambassadors Heather Greene, Freddy May and Mitch Bechard will roll actual casks around the streets, encouraging people to write their dreams and aspirations on them and enter for the chance to win one of a series of dream trips to explore their adventurous and culinary pursuits.
The event tonight will include a special unveiling of the signed cask after it has rolled around the iconic landmarks and streets of Dallas. Being held at Stanley Korshak suite 100, at 500 Crescent Court 7pm to 9:30pm, the tasting will trace the voyage of whisky from new make to single malt, demonstrating how whisky is transformed. Cinco de Dude Sweet
A little over two years ago, I received a phone call at work while my bosses were at the Dallas Market Center. I was in charge of sales for a tea, coffee, and chocolate shop, and a woman was interested in showing us some chocolates she had made. Her name was Katherine Clapner, former Pastry Chef of Stephan Pyles who was starting a business called Dude, Sweet Chocolate, for which she was making chocolates out of the kitchen at Empire Bakery. When she brought samples about an hour later, my taste for chocolate became eternally altered. She played with flavors like Roast Beet, inspired by the original devil’s food chocolate cake, and Oaxacan dark chocolate mixed with paprika and cocoa nibs. These were the greatest chocolates I had tasted.
On Thursday evening, Clapner and her crew combined the shop’s one year birthday with the Bishop Arts District’s Cinco de Mayo Wine Walk festivities. Her staff was decked out in sombreros and matador garb, while she sported a costume that made her the splitting image of Selena. Buckets of Hornitos mixed with tamarind and infused with cinnamon sticks were available as DJ EZ Eddie spun everything from Curtis Mayfield’s “Superfly” to Porno for Pyros’ “Pets.” Continue reading

How Good Is The In-N-Out Burger?
by Steven Doyle
How good are the In-N-Out burgers that are about to sweep through the Dallas Fort Worth area? Several of us on the Crave staff have enjoyed the burger in the past and will of course be doing some side-by-side comparisons this coming week, but we recall back in January a particularly nasty incident involving LA Lakers Ron Artest and LA Clippers Blake Griffin that brought the family owned burger chain to the headlines. More on Mother’s Day
This past weekend was full of much needed rest and relaxation. I personally spent a large chunk of Saturday with my dear mother. You may ask where a good son that daily waxes lovelies about the local restaurant scene might take his mother for luncheon on a beautiful Saturday afternoon. With much trepidation I scanned a mental list of restaurants, each more fantastic than the next, and we happily chose to get our beef on at Maple & Motor Burger. She had never been and was excited at the prospects of noshing on one of my favorite burgers.
