Meet Nick and Sam’s Somm Brian Knoy

On a visit to Nick and Sam’s Steakhouse this past holiday we had the pleasure to meet with manager and sommelier Brian Knoy. Brian is a young buck in the industry, but his passion for service and wines is obvious and shines through in his conversations. Originally from Yuma, Arizona, Knoy happened into the industry as he sought out interesting people as his Marine Corps family hopped around the country.

2012 Dive Bar Tour Rolls Through Dallas

Planning the latest Dallas Bus Tour was a blast. Previous editions included tours that explored Tacos, Pizza, Burgers, and even vegan food in Dallas. The trick behind a successful tour I am finding is not to over think the process. Load up 25 adults onto a bus full of beer, wine and cocktails and point them in any direction and they will have fun.
Such is the case for the latest tour which explored dive bars of Dallas. Now here might be the rub for some, what exactly is a dive bar? I have my definition, you have yours. However, for the first tour exploring almost only alcohol I wanted to play it safe. No stabbings, no arrests, no crying. Continue reading

Scardello Sources Local Charcuterie
We often reel about the charcuterie program at The Grape and for good reason. Brian Luscher is a mad man and has an insane meat program going on at his Greenville Avenue restaurant. Today we heard about a new program at Scardello and it smacks of Luscher’s DNA. We just got off the phone with one of Scardello’s cheesemongers, Ali Morgan, and she gave us the skinny on the new charcuterie being offered at the cheese shop on Oak Lawn.
“We have been wanting to offer charcuterie for some time. We have a few nice things currently like a Prosciutto di Parma, but we wanted much more. I spoke with Brian and he had me stop in for this whole charcuterie lesson,” said Morgan. Continue reading

Four Lounge Celebrates With New Cocktail Menu
We have been keeping a close eye on the work of Keith LaBonte, owner of Four Lounge located at State and Allen in Uptown. The barman has been making crazy good drinks at the tiny lounge and recently announced a new cocktail menu.

We Crave Princi Italia
There have been a few new Italian restaurants hit Dallas in the past few months, and they have changed the culinary landscape for the better. One is the very recent Zio Cecio, which is run by restaurant veteran Francesco Farris which we took a look at some weeks back. Then we have the new addition to the Preston Royal intersection in the old Popolos digs with another restaurant veteran Patrick Colombo at the helm with Princi Italia.
The space at Princi has been slivered a bit, and the Colombo 86’d the banquet room which was turned into an AT&T store. The large bar that was in the middle of Popolos was taken out leaving the wood oven in front of the kitchen. A new bar was placed by the front door giving the room a more open feel. Continue reading
Marquee’s New Burger Strikes Gold! (Literally)
Highland Park’s personal top chef, Tre Wilcox sent a lovely missive via Facebook that displayed some of his experimentation efforts in the kitchen. There isn’t a whole lot to add to the burger that will be sold at Marquee Grill that he didn’t already think about.
Wilcox describes this as a Short Rib-Foie Gras Stuffed Burger with gold leaf aioli, house pickles and truffle parm fries. There is little we can say after reading this, but “damn”.
