Last week we were first on the scene to chat with TJ’s Seafood Market owner, Jon Alexis. He gave us a grand your and we met his new staff. Read about that here if you missed that conversation. Yesterday we stopped by during TJ’s soft opening for further inspection and to taste what Mr. Alexis has been discussing with us for many months now, the lobster roll. Continue reading

Hail Caesar!
The annual Caesar Salad Competition0 may still be the only place in town where salad eaters still have to work to avoid meat. That’s because chefs vying to be lauded with “Hail Caesar!” at the annual fundraiser for the American Institute of Wine & Food don’t limit themselves to the classic Tijuana creation by Italian chef Cesar Cardini (Romaine, Worcestershire sauce, raw egg, croutons, garlic, olive oil and lemon juice and grated Parmesan; anchovies optional).
Most choose add-ons to sway attendees, who vote on the winner. And those add-ons can be everything from a fancy bread pudding infused with chicken craklins to a side of beef (OK, maybe not a full side). And that’s were vegetarians need beware: Meat is common. Continue reading

Hilton Anatole’s SĒR is Officially Open
We have followed the SĒR construction and menu development since the closing of iconic Nana just a few short months ago (here and here ). Many were saddened by the closure, but had those same people visited Nana more than once a year as a special ocassion restautrant, it would still be open. Thus the nature of economics.
SĒR is the first of a ration of restaurants premiering in the month of October, and this quick multi-million dollar facelift will soon prove to be one of the new gems sprouting from the restaurant role of 2012.

Jasper’s Pick of the Week: Rombauer Chardonnay
Rombauer Chardonnay Carneros 2011. $39.99
One of the most popular Chardonnays on the market is Kerner Rombauer’s Carneros bottling. Popularly styled, well balanced and remarkably consistent from year to year, this wine is a stalwart of restaurant wine lists and retail shelves. However when supplies run short at the end of the vintage wine list placements are protected at the expense of retailers, which has made Rombauer Chardonnay impossible to find recently. Sneak Peek at TJ’s New Market on Oak Lawn
We stopped in TJ’s Seafood Market’s newest venture located on Oak Lawn next to Julian Barsotti’s Carbone’s and just feet away from Nosh. TJ’s is owned by Jon and Natlie Alexis and together they have been planning this new concept for the past three years. They will not only have great seafood with an even larger selection than their original store located on Preston at Forest Lane in North Dallas, but will also feature a 24-seat restaurant.
Alexis says he does not want to be in the restaurant business, but rather offer fresh selections culled from the new seafood cases and will be offering chef-driven menu items that will include fish tacos, lobster rolls and full plated meals. To execute the restaurant portion of the market Alexis hired chef Scott Hoffner who ws most recently executive chef at Flippin’ Out Crepes. Continue reading

Chef Graham Dodds’ Plow & Vine Dinner for Eden Creek Farm
I spoke with Central 214’s executive chef Graham Dodds some months ago about Eden Creek Farms. They experienced a particularly rough 2011 due to the drought, and 2012 hasn’t been any easier. At that time Dodds mentioned that Steve and Kristine Orth might actually give up on their farming efforts, and it would be sad to lose this organic, bio-dynamic, bio-intensive and sustainable source of produce. This weekend many of the top bartenders in town met for a summit to see who would represent the DFW area in Cointreau’s bartending throw down in New York City.
