Chef Paul Ko doesn’t need to raise his voice to be heard. With 17 years behind the sushi counter and a reputation built quietly through precision and patience, Ko has carved out a name that speaks louder than any headline. His new Dallas restaurant, Sushi Kozy, isn’t just a nod to his surname—it’s a full realization of his philosophy: refined, personal, and obsessively detail-driven.
In a city teeming with restaurants vying for attention, Gemmastands apart—not because it shouts the loudest, but because it listens. A staple restaurant on Henderson Gemma feels as curated as the dishes it serves, Gemma is more than a restaurant; it’s an ever-evolving expression of seasonality, instinct, and a little bit of magic.
Located at 4509 Greenville Ave. in Dallas, Boxcar stands as a remarkable transformation of a former laundromat into an elegant dining experience that pays homage to the golden age of rail travel. This innovative restaurant is designed to transport patrons back in time, allowing them to indulge in the nostalgia of classic train journeys while enjoying a luxurious dining atmosphere.
DIFFA Dallas is thrilled to share the highlights from the 15th Annual Burgers + Burgundy event, a culinary celebration hosted by renowned MICHELIN Star Chef John Tesar. Located in Dallas at 5630 Village Glen Dr, Kyo Sushi and Omakase is more than just a restaurant; it’s a celebration of Japanese culinary art. Renowned for its exquisite sushi creations and the traditional practice of omakase, Kyo offers diners an authentic Japanese experience that combines the freshest ingredients with innovative flavors.

Guests can choose between two distinct omakase options: a 10-course menu for $99 or a 15-course menu for $130. Diners are encouraged to share their favorite dishes with Chef Han, who might even surprise them with complimentary extras.
We don’t do a lot of recaps of wine dinners, pop-ups and just specialty one-off dinners as of late, we find them a bit of a tease when the evening has passed and the items served are no longer available. This may or may not be true for chef Troy Gardner’s tasting menu he performed last evening for the benefit of the North Texas Wildlife Center.
The dinner was billed as a “wild dinner”, was vegan and mainly featured seafood. Vegan seafood. Which is interesting because Gardner is known for exquisite flavors he seems to conjure with his unique palate and seemingly Wiccan abilities to create vegan replicas of what otherwise be a plate suitable for omnivores.
