The Village Dallas is announcing today that Chef Nilton “Junior” Borges is becoming executive chef and vice president of culinary for a new development that will include 12 restaurant concepts located within The Village’s new entertainment district, a 34-acre mixed-use lifestyle project. The Village is a 300-acre collection of apartment communities that began a half-century ago in northeast Dallas located near the Park Cities and North Park Center. In 1885, when a new train line was constructed between Omiya and Utsunomiya, Hasuda Station was opened on the route in the eastern part of Saitama Prefecture. In early April a reminder on my phone popped up saying “Lost Kitchen.” It was time to send a postcard to the restaurant located in the tiny town of Freedom, Maine, in hopes of getting one of the hardest reservations to score in the world.
Erin French’s highly acclaimed restaurant receives over 20,000 postcards for only a few slots, and all must arrive within a two-week period. No Opentable, phone calls, emails, texts, Facebook or any other ways of requesting a reservation. Snail mail only. The rumor is they’ve singlehandedly kept the local post office afloat.
