Pintxo is a small snack, typically eaten in bars, traditional in northern Spain and especially popular in the Basque country. They are usually eaten as a small snack while hanging out with friends; thus, they have a strong socializing component, and in the Basque country and Navarre they are usually regarded as a cornerstone of local culture and society. Eat Me: Soft Shell Crab at Casa Rubia
A night in Trinity Groves always compels me to make at least a pit stop into Casa Rubia, the kicked up tapas restaurant cheffed by James Beard nominated Omar Flores. Last evening was no exception. I sauntered in for a cocktail, but actually walked away with a happy belly full of crab. In this case it was three smallish soft shells that were perched so beautifully on my plate ever so lovely. James Beard House “Local Flavor from Coast To Coast” Does Dallas
The James Beard Foundation (JBF) announced today that for the second year in a row it will present the James Beard Foundation’s Taste America, a national epicurean tour celebrating America’s culinary diversity. From September 12 through October 25, 2014, the program will stop in ten cities over five weekends, including Atlanta, Boston, Chicago, Dallas, Los Angeles, New York City, Phoenix, San Francisco, Seattle and Washington, D.C. Each city will enjoy a special evening that starts off with a walk-around tasting reception from a line-up of local chefs, followed by a one-night-only, collaborative four-course dinner crafted by a Taste America All-Star and a local celebrity chef. The big news racing the interwebs today is that Omar Flores and John Baudoin have sold their stake in Oak Cliff’ Driftwood to partner and co-founder Sal Jafar II. Jafar will be tapping chef Kyle McClelland, who most recently ran the kitchen in Brooklyn at Prospect. TJ’s Collaborative Lionfish Dinner At Driftwood

TJ’s Seafood and Driftwood held Dallas’ first ever Lionfish Dinner on Monday night, treating guests to five courses paired with wines. This invasive species, which is native to the Indo-Pacific, has found its way to the southeast coast of the U.S., Caribbean, and Gulf of Mexico.
TJ’s owner and seafood guru, Jon Alexis, started off the evening informing diners of the issues surrounding the fish. “Lionfish have no predators, can lay up to 40 thousand eggs every three days, and eat anything and everything they can fit into their mouths. Casa Rubia In Trinity Groves Serves Up A Slice Of Spain
There are a few tapas restaurants in Dallas, but none hold true to the flavor of Spain as much as the new Casa Rubia does in Trinity Groves. The beautiful new restaurant cheffed by Omar Flores with Cody Sharp as sous is cranking out delicious and beautiful plates of authentic flavor. A recent visit revealed a heavenly paella served in the large paellera that easily serves a hungry gathering of four. Flores now makes what is possibly the best charcuterie board in the city, balanced perfectly on a rough-hewn wedge of wood.
On the menu is a version of Flores’ pulpa, as delicious but different that his octopus at Driftwood. The chef has the dish down pat and is a must order. Continue reading

Omar Flores At The Wine Poste For One Special Evening
The Wine Poste is making a name for itself quickly in Dallas. The Design District wine outlet is now offering dinners hosted by chefs from around the city, and are still looking for more talent for future endeavors. On June 3, 2013 Omar Flores from Oak Cliff’s Driftwood will be throwing down a 5-course wine paired dinner starting at 7pm.
We have the menu listed below, and there are still a few seats remaining. The dinner is limited to 24 guests, so you will want to check out the website to secure your seats. Tickets are $125 each and include wines.
