Fantastic Fish Tacos in Dallas

pinktaco_bajafish.jpgby Steven Doyle

Baja seems to be the best place to tag the origins of the fish taco. All my research points there, at least as far as North Americans are concerned. The true fact is somewhat murkier and no doubt flies back to the times of the original tortilla. You place between the fold with whatever you my have on hand. If that is a shard of beef, then it is a beef taco. For our early fishermen, it was the fish taco. Simple enough.

These special tacos are served at beach shacks as well as posh dining establishments, and the recipe continues to evolve. With choices ranging from grilled mahi mahi with tomatillo salsa to boiled lobster with chipotle lime butter, there really is something for everyone. The one thing that we all might agree on is that the best fish tacos are the ones eaten hot as you drip dry in the sun waiting for the next swell. Continue reading

Cooler Weather Means Warmer Food: A Soup Exposé

kingsby Steven Doyle

We have made plenty of lists in the past, and certainly soup has been a big draw for the cold, wintery months such as we are experiencing. One of our favorite soups comes from King’s Noodles (read about that place here). There are plenty of mainstays in Dallas such as the mushroom soup at The Grape, a recipe that will not, and should not ever leave that menu. Other perennials include the marshmallow soup at Rise No. 1 which is actually a rich tomato soup with pillows of roasted goat cheese.

Make a better soup and the world will beat down your door, especially when it is 25 degrees in Dallas.

Today we offer a list of some recent favorites. You will want to check these out in your travels about town this week.    Continue reading

Eight Favorite Ceviches in Dallas

Baja-Ceviche-H-1024x576by Steven Doyle

Ceviche is seafood prepared in a centuries old method of cooking by contact with the acidic juice of citrus juice instead of heat. The preparation and consumption of ceviche is practically a religion in parts of Mexico, Central, and South America, and it seems as though there are as many varieties of ceviche as people who eat it.  It can be eaten as a first course or main dish, depending on what is served with it.

The chemical process that occurs when the acid of the citrus comes in contact with the fish is similar what happens when the fish is cooked, and the flesh becomes opaque and firm.   Continue reading

Happy Pi Day, Ya’ll

piby Steven Doyle

On March 12, 2009 your lawmakers  passed a non-binding resolution (HRES 224) recognizing March 14, 2009 as National Pi Day. It is one of the more legit holidays we discuss here, and it is actually an homage to geeks everywhere who see the date as a reason to celebrate due to its mathematical implications. We say any reason to celebrate anything is just fine by us.

Since we are predominately about food we will suggest a few places to actually enjoy a pi(e) in Dallas.   Continue reading

HPISD Closes Cafeteria Until October And We Have Suggestions

childby Steven Doyle

Earlier today my friend who runs the whimsical Oh So Cynthia webby called out in terror when she received word that the Highland Park Middle School cafeteria would be shut down until October. This means thousands of Parkie moms will have to pay their housekeepers overtime to create a satisfying meal for their children to take to school.

Or you might look at a few suggestions from our staff.   Continue reading
