Why You Should Not Eat Blue Bell Ice Cream In Dallas

The big news hitting the streets of Texas is that Blue Bell is making its comeback in a very large way after experiencing a disaster which affected the health of many people. Although the ice cream is still only available in limited areas in Texas, places like Pokey-O’s, which makes a dreamy ice cream sandwich using homemade cookies and a selection of Blue Bell, actually made a trip to Austin to procure enough ice cream to sell a dozen of the sandwiches Thursday night (September 3rd) for sale to benefit the North Texas Food Bank. The ice cream sandwiches will set you back $25 each.

For those wishing to find Blue Bell, as it has been blasted across the media, you will soon have all the flavors you have come to enjoy at a store near you.

Charity aside, we are going to make a very unpopular stance: Blue Bell Ice Cream just isn’t that great. Especially considering the competition. We made a list of places in the DFW area that should be on your ice cream licking list. Go local! Continue reading

Grinding Our Gears: The Difference Between a Macaron and a Macaroon

The golden child of our modern pastry chef is the venerable macaron. This is the delicious tiny bite of amazing flavor that has a slight snap that gently relents to a bit of gooey blast of jamminess in its lush interior. The macaron is the toast of Paris and celebrated in tea salons delivering a taste sensation without all the fuss of things like “fat” and “calories”.  The macaron is poised with elegance, sophistication, and a thing of beauty in its seemingly effortless brilliance. The macaron has its birthright from  Italy, brought into this world by Catherine de Medicis in 1533 at the time of her marriage to the Duc d’Orleans who became king of France in 1547 as Henry II. Kate Weiser Opening Her Chocolate Shop August 19th

Your wait for something terrifically sweet is nearly over. What has been almost two years in the making is about to come to fruition in Trinity Groves. When chocolatier Kate Weiser opens her doors August 19th it will have much the same wonderment of Wonkaland when Gene Wilder waved his cane as the flowing colors of sweets sparkled in the eyes of the children who stood in glee.

We were able to slow Kate down just for a moment this week to chat a bit about her grand opening. That in itself is a feat of magic since she is highhandedly orchestrating the operations with her tiny band of pastry chefs. Kate is a human dynamo, packed with energy with on setting: full steam. On the confectionary scale of life, the lowly chocolate bar that is available at grocers, gas stations and convenience stores everywhere scores fairly low on the grand scale of treats. In Dallas we have some fine chocolate makers including Dude, Sweet Chocolate, CocoAndre Chocolatier and opening August 19th, Kate Weiser whose shop will be located in Trinity Groves. But the actual largest seller worldwide still stands the mighty Nestle’s, regardless of the quality.

As an impulse buy for someone needing a pick-me-up in the afternoon, or a chocolate hoarding fiend that doesn’t require much on taste or quality will find the average  bar satisfying.   Continue reading

Kate Weiser To Host Pop Up Chocolate Shop At Anatole Starting Today

You remember Kate Weiser who will soon be opening up shop in Trinity Groves. She is the extremely talented chocolatier who’s eponymous shop will spring into action after the first of the year when more restaurants open up on the north side of the Trinity Groves strip, facing the event venue 3015.

However Kate will be busy this holiday season knocking down some chocolate at various pop up locations. Kate designed a special pop up that will be a virtual movable feast. You can find her, and her special brand of chocolates, for sale at the Hilton Anatole this weekend.   Continue reading

We had in studio the chef from Del Frisco Double Eagle Steakhouse, David Holben, who taught us the finer points of beef including how it is aged, prepared and enjoyed. We also ran through Holben’s austere work history and how he became a chef. This is always interesting to us, and love to see how the most successful chefs started their career.
