Behind The Stick: Emily Roxanne Perkins

Most people might be surprised to know that my first stint in town was actually at The Porch on Henderson. Coming from New York City, I couldn’t have found a better transition to Big D. Most people might also be surprised to know that The Porch’s cocktail program was set up by bartenders from Milk & Honey.

Now, many of the cocktails have changed as some of the bartenders but philosophy has always been consistent at the bar: well made-easy to understand cocktails, craft beers and an approachable yet adventuresome wine list. All this served by friendly engaging bartenders.   Continue reading

La Maison Cointreau And A Chat With Brand Ambassador Kyle Ford

Thought to be the first recipe book about cocktails, the bartender’s guide “How To Mix Drinks or A Bon Vivant’s Companion” was published in 1862, written by Jerry Thomas and read by any bartender worth his flip, fizz or julep. An original copy of this book and dozens of others acquired by Cointreau was on display last night during their French-inspired cocktail party in Dallas.

The setting was the beautiful and historic Aldredge House located on Swiss Avenue. There, guests enjoyed Cointreau cocktails prepared by brand mixer Kyle Ford and later entertainment provided by Lady Rizo who is ringer for a young Rosemary Clooney.      Continue reading

Behind The Stick: Sundown At The Granada’s Josh Hendrix

Sundown at the Granada is a true revitalization of the once deteriorating Greenville Avenue. Boasting local and seasonal dishes, many vegetarian options and craft beers, it also can be proud of Josh Hendrix. There is something very innocent about Josh Hendrix yet at the same time you feel like you are talking to the reincarnation of Hunter S. Thompson. He has an unyielding child-like passionate for the craft of making great cocktails that makes you feel good about what you are drinking.

This adds up to pride without arrogance and Josh delivers straight-forward well thought out drinks on his menu at Sundown. He is eager to learn and to pass on what he has discovered to others. I shared some drinks with Josh at the Granada and we talked about how he got into the craft of cocktail making. Hopefully this interview will get me a chance to bartend for the band JJ Grey and Mofro who is playing at the Granada on October 26th (yes Josh, I was serious).          Continue reading

Jason Kosmas Featured In Sept Issue Of Playboy

Barman Jason Kosmas has a long list of accomplishments that he is most proud of. He is one of the owners of what many have called the best bar in the world, Employees Only. He has written a successful book, produced a line of cocktail mixers, and now a line of spirits.

A lengthy list of accomplishments you would think. But what will please his grandfather the most is the fact he made it in the September issue of Playboy.            Continue reading

Moonshine Shenanigans With Bartender Ashley Williams

Last night at the Ryan Barnett underground dinner I was served by a familiar face. Ashley Williams who I had seen previously as bartender at several restaurants including Bailey’s and now Bistro 31 where she met chef Ryan. Ashley is this fantastic bartender who worked under one of the local cocktail masters, Lucky Campbell.

While she was just perfect at pouring our BYOB wine and settling up the silverware for each course, I had something else in mind for the young bartender.            Continue reading

A Visit To Tate’s Craft Cocktails

I stopped in Tate’s Craft Cocktails located on McKinney Avenue last week when I was tooling around town with cocktail maven Jason Kosmas and we met the new manager and chief barman, JW Tate. JW is the son of the owner and comes to Dallas from Winston-Salem, North Carolina where the original bar is located.

You may recall Tate’s opened in Dallas back in December with Matt Ceneviva at the helm. I spoke with Matt about JW and he said, “I worked with JW when he first started bartending and the grasshopper has actually outreached the master.”          Continue reading

Coming To Exposition Park: Craft and Growler

A new beer garden will open “around October” in the Exposition Park area just off Fair Park at 3601 Parry Street.  Craft and Growler will have Dallas’ largest selection of draft beers to go in growlers of all shapes and sizes. For those unfamiliar with the concept of beer growlers, they are containers of beer siphoned off taps to take home. This will enable you to take home beer from places like Deep Ellum Brewing Company who do not currently bottle on a regular basis.            Continue reading
