Market Report: Shed Two Expansions

by Steven Doyle

It is always a good thing to take a stroll through Shed Two at the Dallas Farmers Market. You never know what you might encounter in the building that hosts many prepared foods. This past weekend proves that point well.

At first glance you will find that Natsumi has taken leave, so you are no longer able to sample their fine gelatos. However we learned that Ruth Ann and Bill Glover who operate Fudgemakers, also located in Shed Two, purchased the Natsumi equipment and will be taking a class in New York to learn the finer points of gelato making. They have already begun their build out next to their current business and will soon add gelato to their line up of sweets.       Continue reading

Opa! Pass the Saganaki

by Steven Doyle    photos by Robert Bostick

What’s not to like about flaming cheese?  That is why we set out to find one of the city’s best  versions of saganaki and headed far north to Plano Frisco for a visit to Platia Greek Kouzina.

Move over spanikopita. Yes we love your flaky layers of phyllo and spinach. Of course we adore the ktapadi, the grilled octopus charred in a red vinaigrette.  But the saganaki is the blazing stuff we were craving as we passed through the doorway.   Continue reading

Going Local at Bolsa Mercado

by Steven Doyle

This weekend we took a stroll into the fairly new Bolsa Mercado top check out some of the local products they are moving at break-neck speeds. We ran into on of the owners, Chris Zielke and he showed us around a bit. You will recognize the name from his other Bolsa, the restaurant, just a few doors down the street.

“This is so much different than running the restaurant. I come in on a Monday morning and the shelves are bare, and I have to start all over again,” said Zielke.                Continue reading

Barbour Wine Dinner Hosted at Grace

by Steven Doyle

Recently we were invited to be the guest of Adam Jones and Carolyn Grace Jones at their beautiful restaurant in Fort Worth, Grace, for a very special dinner featuring the wines of Barbour Vineyards. Adam is a long time restaurateur and Carolyn is the inspiration, designer and namesake of the restaurant.

At the dinner we not only met vineyard owner, Jim Barbour, but also Celia Welch his winemaker. Welch is one of North America’s most highly regarded winemakers and has earned a reputation for crafting distinctive wines that express the unique qualities and characteristics of each vineyard.     Continue reading

Discover Burrata in Dallas

by Steven Doyle

I love burrata. It’s creamy and cheesy, very spreadable and fun to share. There are a few places in Dallas you can get burrata and last week we were on a mission to find great examples.

Originally burrata was invented as a way to use the scraps of cheese left over when making mozzarella. The scraps are called ritagli in Italian. The cheese is made by taking a sheet of mozzarella and filling it with the ritagli and thickened cream. The result is a cheese that oozes cream as you slice into it, and you will need to quickly spread the milky cheese onto a crostini or bread.   Continue reading

Wine and Cheese Chat at The Grape

by Steven Doyle

I failed to mention this last time these fine ladies had their wine and cheese chat, but it is coming up again so I can make up for that error. Dallas cheese monger and sometimes craveDFW contributor Ali Morgan from Scardello will be a co-hosting the chat at The Grape along side GM and sommelier Courtney Luscher.   Continue reading

Common Table Has Real Honest-To-Goodness Poutine

by Steven Doyle

The search for poutine in Dallas has been arduous at best. But this week we learn that it takes a village to make the ethereal and  savory dish known by all in Canada as their national dish.

The staff at craveDFW aren’t the only ones stymied by the fact that it is so difficult to find something seemingly simple in a city as large as Dallas. Scardello Cheese monger Ali Morgan has been equally pining away for the dish for quite sometime after she made a cheese trek to Canada.            Continue reading

On Pure Ground Producing Ali’s Bacon Bliss

by Steven Doyle

We have missed Ali Morgan sending in her weekly picks of her favorite cheeses, but in her defense the girl has been insanely busy. While she is out spreading the curd about cheeses people are listening. She is now responsible for many cheese boards you will find across the city.

In fact, we just spoke with chef David Anthony Temple (that’s DAT to you and me), he said he plans to feature Ali’s top picks each week at the yet-to-open Mason Bar. One of the picks that will be featured weekly is Ali’s very own bacon-goat cheese that she created called Ali’s Bacon Bliss and is now being produced by On Pure Ground Dairy in a cool collaboration.          Continue reading
