Grassias, Paula Lambert

by Steven Doyle

If you haven’t checked out the Grand Dame of Cheese Paula Lambert’s shop in Deep Ellum you have not experienced one of the city’s sweet slices of life. The Mozzarella Company cheese shop is tiny; very tiny. But somehow Lambert is able to crank out enough cheese to supply many area shops including Bolsa Mercado, Scardello, Whole Foods, Central Market, and even more regional and national restaurants.          Continue reading

New Menu At Bolsa Starts Today

by Steven Doyle

Today is certainly a Good Friday. Many of you are off from work and enjoying this beautiful day, spending time with family and friends.  I am personally invigorated by the freshness of Spring, and have the perfect spot for you to celebrate today.  Last night I was given a sneak preview to the Bolsa new menu and it is nothing short of breath taking.

Chef Jeff Harris has really shined on this new menu, taking advantage of all the new Spring vegetables provided him by our local farmers like Tom Spicer and Eden Creek Farms. We are actually planning a full on report for Monday morning, but we managed a few snapshots last night and wanted to give you fuel to run out to the Oak Cliff restaurant.  If you have managed to avoid the place this long, perhaps it is time to check out Bolsa and what chef Harris is creating along with his exec-sous Matt Balke.                 Continue reading

Graham Dodds Is Crushing It At Central 214

by Steven Doyle

As most know there have been huge changes at Central 214 since hiring forward-thinking chef Graham Dodds, and soon there will be a fun remodel to reflect more what the chef and the hotel are really about. The Hotel Palomar is the sleek and modern hotel owned by Kimpton and touts to be a green hotel with a corporate philosophy of environmental conservation and consciousness. Soon there will be a remodel to reflect that style more and open up the room more to the hotel.  Continue reading

Tillamook Burger Week

by Steven Doyle

We will sign off any reason to try a great burger, and this week Tillamook provided just such an occasion. We are already knee deep in Tillamook’s Dallas Burger Week and you can find their cheeses layered on some of the city’s finest patties March 17-24, 2012.

What makes this whole Tillamook cheese week so special is that you are guaranteed to have delicious slices of real cheese oozing down the side of your burger instead of some odd science experiment.   Continue reading

First Look: Chop House Burger

by Steven Doyle

I would recognize that bun anywhere. The soft but toasty brioche smacks of the flavorful Empire Bakery as any decent chef-driven burger should.  I did a late night drop in to take a bite out of the new Chop House Burger which just opened but a few days ago. I was downtown most of yesterday afternoon, but a drive-by made me skittish with the hoards of people pouring out of the new burger joint.    Continue reading

Something pretty fascinating is going on each weekend in Dallas. A busload of food enthusiasts load up and discover Dallas by Chocolate, a fun recreational peek into all things culinary.  The main thrust of the tours has been chocolate but there will be a concerted focus in coming months to branch out into other food related arenas and going into unusual local markets, farms, cheese makers, restaurants and shops.   Continue reading
