Grassias, Paula Lambert
If you haven’t checked out the Grand Dame of Cheese Paula Lambert’s shop in Deep Ellum you have not experienced one of the city’s sweet slices of life. The Mozzarella Company cheese shop is tiny; very tiny. But somehow Lambert is able to crank out enough cheese to supply many area shops including Bolsa Mercado, Scardello, Whole Foods, Central Market, and even more regional and national restaurants. What makes this whole Tillamook cheese week so special is that you are guaranteed to have delicious slices of real cheese oozing down the side of your burger instead of some odd science experiment. Continue reading

I did a late night drop in to take a bite out of the new Chop House Burger which just opened but a few days ago. I was downtown most of yesterday afternoon, but a drive-by made me skittish with the hoards of people pouring out of the new burger joint. Continue reading

The main thrust of the tours has been chocolate but there will be a concerted focus in coming months to branch out into other food related arenas and going into unusual local markets, farms, cheese makers, restaurants and shops.
