Celebrate The Repeal of Prohibition Dec 5th

prohibitionby Steven Doyle

In 1919 the 18th amendment was ratified into the Constitution of the United States. In the following years the government would spend $310 million enforcing Prohibition, and lose $11 billion in tax revenue.

Herbert Hoover would say, “Our country has deliberately undertaken a great social and economic experiment, noble in motive and far-reaching in purpose.” That noble experiment would eventually fail, creating more crime and poverty than it had originally set out to eradicate.

H.L Mencken  said, “Five years of Prohibition have had, at least, this one benign effect: they have completely disposed of all the favorite arguments of the Prohibitionists. None of the great boons and usufructs that were to follow the passage of the Eighteenth Amendment has come to pass. There is not less drunkenness in the Republic, but more. There is not less crime, but more. There is not less insanity, but more. The cost of government is not smaller, but vastly greater. Respect for law has not increased, but diminished.”

To celebrate the 83rd anniversary of the 21st amendment ratification, Victor Tangos is hosting its annual “Repeal Day” party on Monday, December 5.

For those inclined to knock a few back in honor of our constitutional rights, the night will feature cocktails under a buck. From 5 to 7pm  (or until the booze runs out) Victor Tangos will feature 83-cent classic cocktails. And if the prices don’t take you back to 1933, the selection of Prohibition-era cocktails will.

Chef Gorji Debuts No-Tipping Fine Dining

gorgi

The “no-tipping” trend is rapidly taking hold in culinary centers around the country, most notably New York, Chicago, San Francisco and Portland.

The success of No-Tipping lies in its equity for both front and back of the house, says Gorji. Instead of servers relying on the largesse of their customers to compensate for below minimum-wage salaries, servers now know that they will be compensated fairly every night—not just on those busy weekends or feel that they have to upsell items to increase their tips at the end of the night. And no longer will those behind the scenes who are essential in preparing and providing the culinary experience be compensated less than those who serve it.   Continue reading

University Park Gem New York Sub Alive Again and Going Strong

nys2by Steven Doyle

Sitting in the sub shop for several hours chatting with owner Andrew Kelley in between the many customers who filed in yesterday I was able to glean that this place wasn’t necessarily about  a truly good sandwich.  True, when chef Kelley took over the shop several months ago after it had sat idle for two years he gave the building a facelift ala sledgehammer and ingenuity, but he also took a hard cheffy look at the ingredients it took to build a better sandwich.  But many see New York Sub as a comfortable neighborhood hangout, and a place to meet. STIRRing Up The Love In Deep Ellum

stirrby Steven Doyle

Deep Ellum is fast becoming a hotbed of  culinary fashion with the advent of new openings that seem to be increasing in speed. The latest opening that gives us cause for a bit of reverie is STIRR located on Main in the space formerly known as Club Clearview.

Cheffed by Chad Bowden, who made a transition from Culpepper in Rockwall, fits into this concept which implements fire as a component in his cookery. There are some familiar flavors that many in Dallas have never sampled but was part of his arsenal in Rockwall. Having Bowden on this side of the bridge is as welcome as plum pudding on a Christmas morning. For those that have never met chef Bowden, you are in for a playful treat.    Continue reading
