DSC04257by Steven Doyle

I was recently invited to the home of Richard Chamberlain for a preview of what he will be serving this year at the Addison Oktoberfest coming up September 20-23, 2018. Chef Chamberlain, of course, is the chef and proprietor of Chamberlain’s Steak and Chop (recently celebrated his 25th anniversary) and Chamberlain’s Fish Market Grill both located in Addison, Texas.

One of my first interviews with Chamberlain was while doing work for the Observer, you may read about that here for some background intelligenceContinue reading

The duck arrives golden, crispy and juicy. The fat has been rendered leaving moistened meat that is carved table-side. The meat is removed from the carcass, the skin removed from the meat. The presentation is quite breathtaking.  Continue reading

Cucos001.jpg

by Trey Moran

Tucked away in a nondescript residential area in North Richland Hills sits a little pink building that serves up some wonderful Cuban and Caribbean food. Cuco’s is a family owned sandwich shop that for many years has been a hidden gem in an area not known for restaurants. I was turned on to this place by a friend who is Puerto Rican (thanks Mireida!) She told me these were the best Cubano’s around and she wasn’t wrong. Continue reading
