Oak Cliff Wine Dinner at Mansion

by Steven Doyle

Have you tried Oak Cliff Cellars wine which has been aggressively marketing their wines through a series of dinners across the city of Dallas? The dinners are always well thought out locations at the best DFW restaurants. If you have not sampled any of the juice you can buy a bottle  at Bolsa Mercado.

Otherwise you can check out one of the dinners like the Mansion is hosting  next week.  This will sell out quickly, and they certainly do not need our help promoting this. But we thought this to be of particular interest to craveDFW readers.     Continue reading →

Rare Red Wattle Hog Dinner at CampO

by Steven Doyle

The Red Wattle hog is a large, red and has a fleshy decorative wattle on each side of its neck.  The breed was thought to arrived on American soil by way of French colonists in the 1700’s who were thought to bring them from Australia. The hog is know for their hardiness and exceptionally lean and juicy beef-like taste and texture.

Last year there were only 200 registered Red Wattle hogs in the United States, making them a particularly rare breed, and you will not typically find the meat on local menus. That is until last night when CampO Modern Country Bistro  executive chef Josh Black set out to create one of his monthly special dinners.  You will recall last month consulting chef Matt McCallister spearheaded his Total Catch dinner, and he collaborated with Black to create the menu for the dinner last night.         Continue reading →

Going Local at Bolsa Mercado

by Steven Doyle

This weekend we took a stroll into the fairly new Bolsa Mercado top check out some of the local products they are moving at break-neck speeds. We ran into on of the owners, Chris Zielke and he showed us around a bit. You will recognize the name from his other Bolsa, the restaurant, just a few doors down the street.

“This is so much different than running the restaurant. I come in on a Monday morning and the shelves are bare, and I have to start all over again,” said Zielke.                Continue reading →

Harris and Balke Serve up with Momentum

by Steven Doyle

This past weekend we celebrated another chapter of the pop-up restaurant that should soon be a full on brick and mortar concern. Cafe Momentum, a Dallas-based restaurant and culinary training program working in conjunction with the Youth Village Resources of Dallas (YVRD) to train students in all aspects of working in a restaurant, and is the brain-child of Parigi chef-owners Janice Provost and Chad Houser.

These students would be our waiters, platers, dish-washers and other such jobs that are crucial for a restaurant, giving them valuable experience that can help them get a job in the industry. In fact, several of the students present now have jobs due to their experience of working with such chefs so kudos to all who are supporting the program.     Continue reading →

2012 Dive Bar Tour Rolls Through Dallas

by Steven Doyle     photos by Robert Bostick

Planning the latest Dallas Bus Tour was a blast. Previous editions included tours that explored Tacos, Pizza, Burgers, and even vegan food in Dallas. The trick behind a successful tour I am finding is not to over think the process. Load up 25 adults onto a bus full of beer, wine and cocktails and point them in any direction and they will have fun.

Such is the case for the latest tour which explored dive bars of Dallas. Now here might be the rub for some, what exactly is a dive bar? I have my definition, you have yours. However, for the first tour exploring almost only alcohol I wanted to play it safe. No stabbings, no arrests, no crying.            Continue reading →
