by Steven Doyle

Chef Keith Frentz owner of Lola in Covington was crowned King of Louisiana Seafood today after winning the 5th annual Louisiana Seafood Cook-Off presented by the  Louisiana Seafood Promotion and Marketing Board. Ten chefs from across Louisiana vied for the coveted title and it was Frentz, assisted by his wife Chef Nealy Frentz, who impressed the judges the most with his Tabasco-spiced Friday Lunch Special, a cornmeal-dusted wild Des Allemands catfish, Camellia red bean and local crawfish succotash, braised collards, and house made tartar sauce. Helicopter To The State Fair Compliments Of The Palomar Hotel Dallas

by Steven Doyle

As the State Fair of Texas approaches we will start hearing about all sorts of deals and attractions with the Big Tex theme. This one from the Palomar Hotel Dallas is more delicious that a box of Fletcher’s Corny Dogs. They are actually offering two Big Tex packages.

The package for $189, which is a good value, offers a room, DART rail passes to the fair, chef Graham’s triple fried potatoes and cotton candy in the room.  Every room gets use of the corporate gold fish regardless.       Continue reading →

First Look: MAX’s Wine Dive

by Steven Doyle

MAX’s Wine Dive makes its debut today with doors opening promptly at 4pm. This is the legendary restaurant that is known for their Kobe beef hot dog, fried chicken and Dom Perignon by the glass. It’s the bad boy of the neighborhood, inspired by the best dive bars in Texas, but with a wicked twist.  We checked out the restaurant last night during one of the preview events, and certainly were not disappointed.

The atmosphere is fairly typical with few exceptions. The restaurant features a large kitchen that is as wide as the bar and very open so you can view the action as your Veal Sweet Bread Pot Pie or Chicken Fried Brussel Sprouts are being concocted by chef Patrick Russell, formerly of Craft Dallas. Both of those dishes are crazy good. What is unexpected are the walls stuffed high and wide with glassware and bottles upon bottles of wine. It is interesting to note that chef Russell served us our last meal at Craft and our first at MAX’s. Continue reading →

Charles Mingus: Chaos, Commentaries, and “The Clown”

by Dr. Spin

When I took my jazz band to participate in the CCCC Jazz Festival in the spring of 2008, I discovered Charles Mingus‘ Haitian Fight Song.  This piece reinvigorated my interest in his work and its educational value. Years before, as a much younger teacher, I tried to get my band to play Goodbye Pork Pie Hat, but as great as that tune is, it requires a musical maturity that, in retrospect, is probably unreasonable for the average high schooler…forget unreasonable and go to the Pharmmacy
