It Has Begun: Deep Ellum Pecan Lodge Is Fully Operational

The day finally arrived, and this past Friday the many fans who had previously waited for hours to sample BBQ vittles from Pecan Lodge hastily plowed through the long line that curved outside the new building in Deep Ellum. With nearly 5,000 square feet, the new Pecan Lodge was able to accommodate the hungry hoard with ease, with wait time just mere minutes due to several stations that sliced and diced the smokey meats.    Continue reading

4th Annual Deep Ellum Brewing Co Brew-B-Q Beat Off Thirst

This weekend marked the 4th Annual Brew-B-Q event at Deep Ellum Brewing Company which featured a total take over of the brewery with crowds filing throughout the compound. Even with a pending downpour, fans of the Dallas brewery came out in record numbers to sample many of their seasonal favorites including the powerful 8.7% double IPA Dreamcrusher, and the Zwickel Tickle, a blonde lager.    Continue reading

Work Bar and Grill Works For Me

BBQ is always a source of consternation. Opinions on the perfect rack of ribs or slice of Texas brisket will always weigh heavy for those that love the smoked meats. There is certainly room for everyone in the BBQ field or we would not see the sad chains that dot the dining landscape. That said, I found a wonderful example of brisket last night in Deep Ellum at Work, which has been in business for the past six months. There I met up with managing partner, Shea Comer and pitmaster Doug Pickering.

For Comer, this is his first restaurant. He previously held posts at various restaurants and taverns, usually behind the bar. Like most in the business, Comer had a hankering for a restaurant of his very own. This is where it gets interesting. Comer met up with his new partners who were just looking to own a bar when he suggested a they do both food and booze. Work was born.    Continue reading

Pecan Lodge Moving To Deep Ellum

I had a pretty good conversation with Justin Fourton, co-owner and BBQ Magistrate at Pecan Lodge,  last week at the conclusion of Meat Fight. We discussed the possibility of Pecan Lodge moving out of its current location at the Dallas Farmers Market. He asked where I thought he was moving to and I said good money was riding on Deep Ellum. He confirmed off the record, and said that it made the most sense. He wanted a venue where he could host large parties and do more with the brand that just shovel out delicious BBQ.

Today we were sent a release from Diane Fourton (Boss Lady), and the cat is now officially out of the bag. Deep Ellum is indeed where Pecan Lodge will move to, making that section of Dallas even stronger. Don’t forget, these guys also make some of the best fried chicken in the state.  Continue reading

Meat Fight Rescue

Meat Fight is upon us, and it would seem every decent barbecue  Generalísimo will be either working or judging the event. You know you didn’t get a ticket, we didn’t either. It is a fantastic event that started as a small backyard brouhaha to raise a few bucks for National MS Society by the Observer James Beard award winning writer and former Cheap Bastard, Alice Laussade. Last year the event came out of the closet and was opened to the public with rave reviews, including one from craveDFW.

My ticket last year fell onto my lap after a friend could not make the event. I was driving back into town from the Terlingua Chili Cookoff when the offer was made. I floored the gas pedal and made it back in time for the closing credits of the event but was still able to sample a few slices of brisket and a chunk of sausage made by Brian Luscher. I ate the flesh and it was good.

For those who were not fortunate enough to secure a ticket during the three minutes they were for sale, we have a few meat suggestions of our own. Laussade mentioned a few weeks back that if this event was as successful as she hopes (and it is already) that next year will be much larger and more inclusive.  Peruse our meat laden list below, and if you use any of the following ideas to pass the time your luckier friends are at Meat Fight, consider making a donation to the National MS Society. craveRADIO: Live At Kent Rathbun’s BBQ Workshop

Last week on craveRADIO we crashed Chef Kent Rathbun’s big BBQ Workshop at his KB Woodfire facility in Plano. This awesome venue is where you can host your next party in a restaurant-like setting all your own. On the program Kent explains how the venue works, and we also chat up his catering chef Jeff Qualls who can literally cook fresh for 1000’s of guests at this location, or yours.

Also on the program we hit up the guys from the Green Egg, the BBQ masters who work wonders with this very unique grill. If that wasn’t enough, we also spoke with Four Corner’s Brewing Company owner George Esquivel who was supplying beer for the workshop.     Continue reading

This Week On craveRADIO We Crash Kent Rathbun’s BBQ Workshop

This week on craveRADIO you will hear the show we produced at Kent Rathbun’s BBQ Workshop at his catering facility, KB Woodfire Grill in Plano.  The show was fast paced with more guests than we normally host including Kent Rathbun and KB catering chef Jeff Qualls who is a CIA graduate and has worked at some very notable kitchen.

In addition to the chefs we also chatted up representatives from The Green Egg, that marvelous grill that can cook virtually anything outdoors. We also visited with Four Corner’s Brewing Company owner George Esquivel who was supplying beer for the evening. Esquivel talks about the beer they are currently brewing and the new brew pub that premiers this weekend in Trinity Groves.    Continue reading
