Rathbun BBQ Boot Camp This Weekend (And You Can Win Seats)

On September 29th diners, home cooks and backyard barbecue enthusiasts are invited to KB’s Woodfire Grill for a special presentation. Chef Kent Rathbun will be doing demonstrations with the Big Green Egg and showcasing a variety of barbecue techniques as he cooks up some of his favorite meats. So whether you’re cooking for yourself or an entire tailgate party, you’ll be able to absorb all the technical know how required to pull it off.

And all the while, Chef Kent will interact with guests, field questions and wax poetic on important subjects like the difference between St. Louis style ribs and baby back ribs. In addition, craveRADIO will be recording a show live at the event, and you will get to meet Kenny the Wine Czar, Chef Uno, the lovely Melissa and myself. There will also be some fun surprise guests in the house.

Meat Fight Coming To A Brewery Near You Meatvember 17

Who doesn’t love a good Meat Fight, especially where you are able to sample alongside some of the beefiest judges from across the country, including one Nick Offerman. Here is the low-down on the hoedown, scribed by a James Beard Award Winning beard lover and meat enthusiast, Alice Laussade:

Hold on to your pork butts, Dallas. Meat Fight®, a barbecue competition benefiting the National Multiple Sclerosis Society, will be held Sunday, Nov. 17 (5-8 p.m.) at Four Corners Brewery.

Meat Fight, the brainchild of James Beard Award Winner and Dallas Observer columnist, Alice Laussade, will bring together a dozen of Dallas’ best chefs to compete in four categories: brisket, ribs, sausage, and wild card. Nine barbecue experts will judge the competition meats, which attendees will be able to sample with beer provided by Four Corners Brewery.      Continue reading

craveRADIO: Meet Dean Fearing, Charlie Pap and James Jordan

Another beautiful day in the neighborhood as the craveRADIO staff hosted another slate of fantastic guests. This week we had on the charming and talented Chef Dean Fearing from Fearing’s in the beautiful Ritz Carlton Dallas in Uptown. We had a spirited conversation about wine, women and song, as well as BBQ and that one time when Fearing almost murdered the most beloved woman on earth, Julia Child. Fearing also chats with us about his new Fall menu which is about to debut any day now. We also chatted about certain menu items which can never, ever go away. Think lobster tacos, his legendary tortilla soup and that amazing banana pudding that just makes you feel at home.    Continue reading

Beer, Bourbon and Brisket Festival September 28

Jack FM just announced the inaugural Beer, Bourbon & Brisket Festival which will be held Saturday, Sept. 28 from 5 p.m. to 11 p.m. at Panther Island Pavilion, 395 Purcey St.

The event is BYOT (Bring Your Own Tube), for cooling off in the river while sampling BBQ.  Vendors will include Daddy Rex’s Twisted BBQ, Holmes Smokehouse, North Main BBQ, Smokey’s BBQ, Robust Energy Drink, Unpredictable Snow Cones and Sam Adams.

The craft beer and bourbon tasting tent will feature beer sampling by Samuel Adams, Deep Ellum Brewing Company, Community Beer Company, Lakewood Brewing Company, Mendocino Brewing Company and Woodchuck Hard Cider.  Spirit samples will include Angels’ Envy Kentucky Bourbon, Forty Creek Whiskey and Texas Silver Star Whiskey.    Continue reading

The 2nd Annual Cowboy Barbeque Cook Off is September 14 and is sponsored by the Fraternal Order of Eagles #3108 (Dallas, TX) and Lone Star Beer, the national beer of Texas. Beer and BBQ is a match made in heaven. This is an unsanctioned, amateur barbeque competition to benefit the Cancer Therapy and Research Center (CTRC) of San Antonio, Texas.   Continue reading

Fearing’s Celebrates 6th Anniversary with a True BBQ Bash

Sunday night brought cooler weather with a pleasant departure from the scorching heat that Dallas residents anticipate through the end of August. But, if you happened to be enjoying that lovely weather at Fearing’s inside the Ritz-Carlton, you were also in attendance at a truly wonderful barbecue event to commemorate the restaurant’s 6th anniversary. Like any good birthday party, some fantastic guests were in attendance. Deep Ellum Brewing Company was on-hand to present several local ale offerings. And well, doesn’t a Dallas Blonde pair well with BBQ?

The co-host of the evening was none other than Chris Lilly, barbecue legend in his own right. Hailing from Big Bob Gibson Bar-B-Q in Decatur, Alabama, Chris told me he’s inspired by all types of food and wants to bring diners, “not just your ordinary barbecue, and hopefully something Texas has never seen before.”

So I had to ask what enticed him to cook in Dallas. “Fearing’s and Dean are all about bold flavors… Dean has these, rich, bold, in-your-face flavors” Lilly exclaimed. With a rich family history in barbecue, multiple championships, and a secret white barbecue sauce, it’s clear that Chris Lilly was the right man to help ring in another year of celebrated food here at Fearing’s.   Continue reading

Katy Trail Ice House Has Awesome Barbecue

We recently ran across Jimmy Fell, the general manager over at the Katy Trail Ice House. You will know Fell most recently from Red Dog Right in Grapevine, but most prominently when he worked for Jim “Sevy” Severson at his namesake restaurant on Preston. Fell was excited to talk about the latest addition to the menu at the Ice House, and how it has drastically improved not only the cuisine but what can be long wait times for the food to arrive at your table.

Enter a giant behemoth of a smoker that is a bit displaced for the moment while the owners build a shed complete with its own exhaust system on the property. Until then, the smoker is located about a block away in a parking lot owned by Katy Trail Ice House.         Continue reading
