Cooking Classes at 3015: Week Five

chefsby Robyn Folmar

The penultimate (look it up) cooking class at 3015 Trinity Groves focused on braising and poaching, but Chef Mike threw in some pasta marinara, wine poached pears and classic crème anglaise to keep us dependent on him.  The menu was all over the map, but the variety was nice and once again, we answered some existential questions like how to cook a meat-clump like a London broil. Answer: braise that beast!

Follow Robyn’s previous classes: Week One, Week Two, Week Three and Week Four

Bottles and bottles of cheap red wine were emptied, and not from paper sacks into my belly. Basically, the beef ribs were browned in the skillet to develop the flavors, then they were showered with wine and unceremoniously shoved into the oven. Presto, a rich n’ beefy main course without any drama.  Chef Sharon Van Meter joined us and explained that with braising you take a tough cut of beef and slowly disintegrate the interior fat to produce a tender bite. With this in mind, you can have a rich main course without having to bankrupt yourself buying a bone-in ribeye.    Continue reading →

A Good Value Chardonnay

Edna Valley 2011 Chardonnay.1by Andrew Chalk

California’s Central Coast might be described as ‘antifragile’. Its soils seem to adapt to a large range of grape varieties so as tastes change, so can the varietal mix. A case in point is the 2011 Edna Valley Vineyard Chardonnay from California’s Central Coast AVA (American Viticultural Area). It is a fairly large production wine (a quarter of a million cases) that nonetheless manages to express the characteristics of New World fruit and a light touch of oak that will assure it a large audience. It is widely available in Dallas and has a suggested retail price of $15.

Why Does Kim Jong Un Hate Austin?

kim jong unby Steven Doyle

Kim Jong Un announced plans to target Austin which has stirred the city of hipsters to question, “why me”. I am sure everyone in North Texas appreciates our brothers and sisters in Austin, and it would be tragic if we missed out on SXSW, a visit to Franklin’s or the nightly flight of bats under the Congress Avenue Bridge.   Continue reading →

Who Moved My Cheese?

salersby Rich Rogers

Rich from Scardello, our city’s resident caseophile,  sends word that his cheese has been highjacked. Listen in on his tale of woe and console him by checking out a few cheeses that made it to the shop on Oak Lawn in Dallas.

The Salers cow in the picture is not happy with the FDA, and neither am I. Is it bad to say that about a department of your government? If it is I don’t care. They have my cheese and they aren’t going to let it go. They’re only doing it to protect us, but lately they have been overly protective. Queso in point – my cheese.

The best thing I tasted at the winter Fancy Food Show was a piece of Rodolphe’s Salers. This incredible hard cow’s milk cheese was so packed with complexity and incredible flavor. (His 3 year old Mimolette was not far behind in the amazing category.) I liked the Salers so much I ordered a 50 pound wheel and didn’t ask how much it was going to cost. I didn’t care what it cost, it was THAT good!   Continue reading →

Party Is At Dish Tonight

Patio Party Launch_Blast_finalby Steven Doyle

Patios are the rage in Dallas; covered patios even more so once temps bust the century mark. You can imagine how excited I became when I heard that Dish gussied up their patio. I was at Dish for brunch this past Sunday and it looked fab. Now there is a party to celebrate.         Continue reading →

craveRADIO: April 14, 2013

14_2013_04_Crave_Radio-2019by Steven Doyle      photos by Robert Bostick

Last week on craveRADIO we had in studio the bodacious Bob Stephenson from FnG Eats in Keller. Chef Bob was gracious enough to bring the crave staffers a bountiful feast of Habanero Peach BBQ Ribs, El Comal Baked Beans, a little Mac a J.A.C and Texas Sweet Tea. Needless to say, we need more guests like Bob.

We discussed the menu at FnG, which happens to be fun plays on a lot of familiar dishes, and the good chef enraptured us with a poem. You see, Bob is what they call a Poetry Slammer. He travels across the country to participate in poetry events, and if you listen to the show you will be able to see why he does so well.   Continue reading →

gelatoby Steven Doyle

Marcelo Kreindel, owner of Trentino Gelato, thinks about chocolate in a different way than most. Trentino is the Houston based gelato concern that is shaking the foundations of our beliefs in not only gelato but chocolate as well. Kreindal has collaborated with a bean-to-bar chocolate company called Tejas Chocolate which is located in Spring, Texas to bring the more exotic chocolate using single sourced beans from Venezuela, Brazil, Ecuador, Bolivia, the Dominican Republic, Madagascar and Mexico.
