FarmByrd Not Just About The Hens

farm5by Steven Doyle

We took a look at Farmbyrd when they opened and have been in for a visit a few times since then. Just over a year later chef Ryan Carbery, a classically trained chef, is doing what a few others have chosen as a path. He is bringing chef driven fare to the general public at bargain prices, few frills and doing it very well.

As with any chef, there is that moment when you possibly get a tad bored with creating the same thing each day, albeit truly fantastic. In the case of Carbery at FarmByrd he stretched his chef wings, no pun intended, by offering uniquely kicked up dishes at a fast casual prices. Consider this a win-win for all concerned. It keeps chef happy and interested, although he is a major partner in the business, and it keeps the chicken eating public extremely happy only to walk into his Plano digs to find crazy good food being offered besides the usual fried and rotisserie birds.  Continue reading

2018 James Beard Semi-Finalists Announced, Looks Dismal For Dallas

beardby Steven Doyle

The James Beard Semi-Finalist list reared its head today. The idea is if James Beard sees his shadow we enjoy a year of fine dining and a swillingly charming wine list. Or so it would seem based on the most recent semi-finalist list.

Dallas took a tough hit this year. Stephan Pyles generally makes an appearance, only to be a bridesmaid. With his fairly new Flora Street and it’s superior menu he should come out on top. John Tesar is whipping into submission some of the finest beef in the Americas yet went unnoticed by James Beard.  Continue reading

El Famoso Opens Feb 16, The Cal-Mex Of Our Youth

interior el famoso .jpeg

El Famoso – a Southern California-Mexican inspired diner and bar – will open to the public on Friday, February 16 for lunch and dinner at Gables Water Street, a mixed-use development in Las Colinas.

After traveling around Southern California exploring the origins and evolution of Mexican street food in that part of the country, owner and creator Charlie Green (better known for bringing Olivella’s to the Dallas Fort-Worth market) identified a forgotten niche in the fusion of Mexican comfort food with its American counterpart. Seafood Shack For Lent

seafood-shack1by Steven Doyle

I am not Catholic or Lutheran so I do not fully grasp the whole Lent concept. I know from an outsider’s point of view that there is some fasting and penance going on, so that would pretty much leave me out of that whole business. There is also  something called Joyous Saturday, but aren’t all Saturdays joyous? Mine certainly are.

Then we have all these pre-Lenten activities which is an opportunity for excess. This makes the whole season seem much more appetizing for those of us on the outside of things. Mardi Gras could create converts, to be sure.

Catholics over the age of 14 are required to abstain from meat and from food made with meat. With that, this is the busiest time of year for our local fishmongers.    Continue reading

Niwa Brings An Authentic Yakiniku Experience To Deep Ellum

Niwa_interiorby Steven Doyle

Opening in 2016 Niwa brings true Japanese BBQ (yakiniku) to Deep Ellum on Main Street. Similar to Korean BBQ, which most of our readers might be familiar with, the Japanese have a bit more finesse.

In a Korean BBQ restaurant, you’ll usually be served with marinated meat that’s ready for grilling. It is also not uncommon for the servers to cut the meat for you using scissors and to actually grill them right in front of you. Meats on yakiniku restaurants, on the other hand, are generally not marinated when served. Instead, the cut pieces of meat are neatly served on a plate together with raw vegetables. Consider yakiniku a higher quality meal choice with better cuts of meat and ventilation system. You will not walk away smelling of grilled meats, although that could be considered a higher form of pheromone.  Continue reading

Five chefs, five pigs and five winemakers are ready to create the Dallas food ultimate experience for the first time since the competition’s inception.

Cochon555, a nose to tail competition, was created in 2008 in response to lack of education around heritage breed pigs. The event is also dedicated to supporting family farmers and educating chefs and diners about the agricultural importance of utilizing Old World livestock.  Continue reading
